Basic Homemade Spiced Rum

1 750 ml bottle of decent quality rum (we prefer dark)
1-2 whole vanilla beans, slit lengthwise
1 cinnamon stick, broken into pieces
2-3 whole allspice berries
2-3 whole cloves
5 whole black peppercorns
2 cardamom pods
1/4 tsp freshly grated nutmeg
Peel of one orange, white pith removed
1 slice of fresh ginger

Use a mortar and pestle or spice grinder to grind the cinnamon stick pieces, allspice, cloves, peppercorns and cardamom pods. Combine with vanilla, orange peel, nutmeg and rum in a clean glass container with lid. (Save rum bottle.) Allow to sit for 4-5 days, shaking occasionally (you can taste for readiness), then strain out solids and put rum back into the original bottle. Enjoy!
