Raita

This refreshing yogurt dish is often served at meals to cool the palate. If using the entire cucumber, add an extra cup of yogurt. You may also add finely diced tomatoes and minced scallions.

1/2 English cucumber, peeled and grated

1 cup plain whole-milk Greek yogurt

2 TBS minced cilantro or mint

1 tsp lemon juice

1 tsp minced ginger root

Salt and pepper, to taste

Place grated cucumber in clean kitchen towel and squeeze dry. In medium bowl, combine cucumber, yogurt, cilantro or mint, ginger root, salt and pepper. Serve as a side dish.
