Gervasi Vineyard Opens The Still House: Distillery, Coffeehouse & Craft Cocktail Lounge

Gervasi Vineyard, an upscale, Tuscan-inspired destination winery resort in Canton, announced the grand opening of a new distillery, coffeehouse and craft cocktail lounge, The Still House.

Owned by The Swaldo Family, the newest addition to Gervasi Village was an inspiration of the family’s Italian heritage. Every Italian village includes a chapel. Inspired by the St. Gervasio church in Denno, Italy (where the family’s grandmother was raised), The Still House is the chapel at Gervasi Village … with a twist. This chapel is a distillery featuring the craft concoctions of the destination’s latest addition, Gervasi Spirits.

With this recent expansion, Gervasi Village is growing to focus on a whole new audience for the destination winery resort. The swanky new venue is a coffeehouse by day and cocktail lounge by night. The Still House offers a full-on, tempting yet celestial experience. During the day, guests of Gervasi may enjoy a signature Gervasi Caffé with pastries and snacks in a social and connected space. In the evening, the venue offers signature spirits, cocktails, draft beers, Gervasi wines, live music and delectable snack menu. 

Coffeehouse

Open seven days a week during the morning and day hours, The Still House operates as a coffeehouse and features Gervasi’s signature GV Cafféline of proprietary blended, organic, fair trade, and locally roasted coffee beans. A large variety of espressos, lattes, flat whites, cappuccinos, and iced/cold brew coffees are available with an array of brewing styles including drip, pour-over, French press, and more. Delicious breakfasts are served including egg and cheese frittatas, croissants, and biscotti. All of these hand-crafted specialties can be savored in a relaxing atmosphere for reading, socializing or take them on-the-go.

Craft Cocktail Lounge

In the evenings, Wednesday through Sunday, The Still House becomes a swanky cocktail lounge offering elegant seated and standing bars, soft lounge seating, casual booths, as well as two cozy private rooms offering seating up to 10. The beverage menu features over 120 spirits including an extensive list of bourbons, scotches, and tequilas, as well as a broad cocktail menu offering the traditional tried-and-true classics of the prohibition era. The high-end cocktails offered on the craft cocktail menu feature the cutting-edge flavor combinations and flair techniques of today’s mixologists.

The Sin Room

The Sin Room is a quiet, heated, outdoor nook that features an incredible selection of cigars. The rich, classic atmosphere provides the perfect spot for guests to unwind and escape from daily troubles and enjoy a good cigar or pipe smoke.

The Distillery

Gervasi’s distillery is scheduled to open in January. The distillery integrates technical innovation and traditionalism to produce liquors and spirits that are rooted in Gervasian artistry of passion, craft and creativity.

The state-of-the-art distillery features a 3,000 liter Mash Turn and a series of 1,000 liter fermentation tanks to transform the artistic mash bill into a distillable solution. Distillation is accomplished with an impressive 1,000 liter hybrid still comprising a traditional lustrous copper alembic pot still for production of bourbon, and whiskeys coupled to dual copper reflux columns and a botanical chamber for the production of vodkas and gins.

The barrel program utilizes superb North American barrels from three-year seasoned white oak that has been charred to perfection by leading coopers in Kentucky. Further refinement of selected spirits is accomplished in hand-selected Gervasi wine barrels. The alluring barrel array can be admired through the tasting room’s panoramic window.

The distillery is designed at 25,000 bottle annual capacity and is poised to produce bourbon, whiskey, vodka, gin, brandy, rum and Italian liquors.

Gervasi Spirits

Upon the opening of the new distillery (January 2019), Gervasi will offer three distinctive custom-blended spirits:

  • “Saints Desire”, a captivating Blood Orange Gin distilled with Italian blood orange peel and an artisan small batch cocktail gin with a citrus focus.
  • A Rose Vodka called “Sinner’s Blush”, which receives is flirtatious hue and seductive nuances from Gervasi’s estate grown Lascitowine featuring the Frontenac Gris grown in the Gervasi estate vineyard.
  • An exquisite Bourbon finished in hand-selected Gervasi wine barrels once home to the Abbraccio, Cabernet Sauvignon, to elevate its character and reflect Gervasi winemaking craft.

The three custom-blended spirits will be made available early 2019. Each of the flavor-infused spirits are carefully crafted to enjoy neat or as signature ingredients to Gervasi’s creative cocktails.

The Casa Boutique Hotel

Per popular demand and after many requests to expand the capacity for overnight stays, The Casa, a boutique hotel, will make its debut this spring.  The 24 luxury suites offer king-size beds, in-room fireplaces, heated floors, oversized showers, and all of high-end and signature amenities you would expect from a high-end resort. Tucked away in the back 25 acres, the gorgeous rooms face a pond in a private sanctuary providing an absolutely peaceful and serene stay.
